Maybe this is supposed to be in another forum, but I don't care. This forum will get more looks.

Tonight I tried to surprise the old lady by making her dinner. I decided on Chicken Fried Steak, mostly because I love it and she's never had it.

It was my first time attempting to make it and like other things the first time was messy and awkward.

My question is this: Why did all of the breading fall off the meat when I flipped it? I flipped the meat a total of two times and both times the breading came completely off leaving me with bare naked steak. It came out like crap.

Yes I fried it, and yes the oil was hot enough.

What gives?

How long did you let it rest with the breading before frying, and what did you use (milk, buttermilk, etc) to coat? Did you use breadcrumbs or flour? If you used flour, I'd have dredged it twice, but I'm sure Heu or Schutd will have better advice.

How long did you let it rest with the breading before frying, and what did you use (milk, buttermilk, etc) to coat? Did you use breadcrumbs or flour? If you used flour, I'd have dredged it twice, but I'm sure Heu or Schutd will have better advice.

1. About 30 seconds.

2. One egg and some water (according to the recipe).

3. Flour, dip in egg crap, bisquick.

Hot dogs on the grill
Top Ramen
Spaghetti
Take out

First, the good thing is you put out an honest heart felt effort and should have got laid, which was the goal anyway.

Next is never try to make a meal Denny's screws up, if they can't do it neither can you. Moons Over My Hammy is on the table but no dice on the CFS. For craps sake I am yet to identify any chicken in this thing so the recipe is suspect from the start. Obviously me, you and Denny's are outclassed by this meal so skip it.

Third, Stop messing with the economy. You pay others to make her the CFS these people need the income. She doesn't compete with strippers you don't compete with chefs, it's an unwrtitten rule but must be followed.

The good thing is maybe you invented the next new craze with breadless CFS. Naked CFS! Or maybe CFS Gone Wild! CFS Raw!

I'm not sure what to think but the fact you used the oven at all is impressive. Just don't ever do it again you're lucky to have lived.

Deep fry them. Everything else seems up to par but they must be deep fried. If not they will stick and your breading will fall off. By "deep frying" you must have the food totally under and cooking at the same time all the way around, like a fish fry! You get the hint. What you were trying to do is like frying french fries in a pan. Ain't happening.

1. Pat down the meat with a dry paper towel to get off any extra moisture.

2. Flour it up. Shake off all extra flour. You should have very minimal flour on the meat at this point. To much flour in this step will cause the egg mixture not to stick properly and your coating will fall off even if you deep fry it. This is where most people make there mistake.

3. With the egg mixture again you dont want to much on there. Just enough to coat it and give the bisquick something to stick to.

4. Deep fry it.

Make sure you don't put too much in the pan all at once. That will lower the tempurature of the oil.

Joeshmo is right you obviously had to much moisture between the breading and the meat causing a steam pocket which made the breading fall off.

Next time pat the meat dry. Also one of the best tricks for battering is to let everything be room temperature.

Let your breading station sit out for 15-20 minutes as well as the meat.

ALWAYS COOK MEAT WHEN IT IS ROOM TEMPERATURE.

These people seem to know how to make a decent chicken fried steak...never made it myself, but this seems to be a good way to try it out. Doesn't answer your question, but may help for future purposes.

I think that's part of your problem. Should let them sit longer.

Harley is actually a decent cook. Women find a man that can cook sexy. He knows what he's doing.

(It's okay that I just said that, because Harley (to me) isn't a man...just a brother. There's nothing sexy about a brother that can cook).

Thanks for the insult. Eat whatever you want. I meant for it to be humorous. Too bad it wasn't perceived as such.

I would match my diet to anything out there. I am quite content and healthy as can be. BTW the food I prepare tastes great and is quite diverse. I sure as hell did not come on here to lecture. It was a joke.
