Favorite simple white fish recipes?

I got some nice snapper filet today. I usually just dust thin white filets with a mixture of minced pecans, flour, garlic, and shallot pepper or lemon pepper, and saute in butter with a spritz of lemon juice, but if anyone has interesting quick glazes, sauces, or other saute-type recipes to jazz up fish, I'd like to hear.

Make the Bisquick pancake batter, dip fish, fry in oil, eat with homemade tarter sauce.

classic french: brown butter sauce.

Heat a lg skillet, add butter and cook over high heat until foaming subsides. Your see the milk soplids start to turn brown, dont go to far, black is bad. When they are nicely brown, add a splash of lemon and kill the heat to stop the cooking. Add lemon segments, capers, and chopped parsley. Pour over fish. Delicious. As far as the fish goes, a little salt and pepper, and pan roast the filets in olive oil, nothing more.
