grilled veggies

One of my favorite things in the world is taking some fresh veggies, tossing them in olive oil and salt and pepper and cooking them up on the old grill.

Last night I had zucs and cherry tomatoes.

Delicious. I like to slice up an eggplant and grill it. Asper-grass is also good. It requires a piece of foil to keep it on the grill.

I need one of those. Red Bell Peppers are also excellent when cooked until the skins are black. Peel off skin and you are good to go. BAM!!

Veggies are also good in the Rotisserie....I like putting a whole chicken, and cut up some squash and carrots with it....let it go for a couple hours over a charcoal fire with lots of Mesquite.

Speaking of syrup and tossing salad, my wife sends me to the store with a list of things to get. On it are jelly and syrup..in a row. After the word jelly, she writes ("I prefer syrup"). Cracked me up.

Ya know, I always thought I hated asparagus but I think it's because they were always boiled and yucky.

Now I grill them with some EVOO and balsamic vinegar - quite yummy! I do find they give you a bit of malodorous gas, tho.
