Guacamole recipes.

I made some Guac today. It was good but could be better.
Here's what I did.
Avacado, a little mayo, garlic powder, lemon pepper (I woould have used lemon juice but I didn't have any), scallions and blended in some salsa.

What do you do?

I use two or three avocados, two jalapenos, quarter of an onion, some lemon juice, a clove of garlic, and some cilantro.

Soooo good!

Easy

Smash up 2 Avs.
Dump in half a container of some top shelf spicy pico de gallo
Squeeze of lemon

Done

2 avocados
1 small red onion
dice a tomato
finely chop a jalepeno
squeeze a lime over it an mix it all up and you have a little mexican heaven in a bowl.

I made some for tailgating once. It was pretty good, and I am not a big guac fan.

I'll see if I can find the recipe.

Avacado (beat with a fork or spoon until smooth)
Add the juice from one lime.
Add salt, freshly-ground pepper, garlic salt.
Chop garlic and white onion.
Mix and taste.
Add chopped roma tomatoes to the top of the guac.

Thought I'd share this because I found it really helpful. The best way to peel an avocado is to lay it on a cutting board and take a big swing with a big knife right into the center. That will get your knife stuck halfway into the pit. Then you can pull the halves of the avocado right off and it's easy to get the pit off the knife.

Before I started doing that, it would take forever to peel and chop the avocado.

Or you can cut around an Avacado and then once you have it in half whack the pit with your knife. It will get stuck on the knife and then all you have to do is turn it and pop it off with your thumb. And never slice an Avacado after you have peeled it. Slice it in the peel and then use a spoon to get out the slices.


My guac recipe is as follows:

3 avacados
1 tomato
half a red onion
two table spoons of sour cream
lemon juice
salt and pepper

Mix and serve

Why? I always put my avocado through my egg slicer (I cut the half in half the other direction & it fits perfect) so I have perfect, easy slices for sandwiches.

OK, I am Hispanic and I have a 45 yr old + Avocado tree in the backyard of my Mother's house that my family has cherished over the decades. My Mother has a great recipe she brought from her home town of Guadalajara, Mexico.

Here it is:

5- avocados
cilantro - minced - lots and lots or to your taste
2 small - tomato - (small cubes)
2 small- white onion- finely chopped
1 or 2 / optional - Jalapeno - roasted
1/4 cup - mexican creme or sour cream
1 or 2 - Mexican lime / Key lime - to keep from browning.
salt to taste

* traditional Mexican guacamole doesn't contain anything other than
avocado, jalapeno (roasted and blended with avocado) & salt but the closer you get to the American border, the more Americanized it gets.

If you guys want to go "surf", just add small cooked shrimp into the recipe and you can make tostadas (fried tortillas with toppings) with it.

Looks like I have to make a trip to mom's now. All of a sudden I see myself eating some Guacamole & shrimp...damn!

3 ripe Haas avocados
1 medium finely diced ripe tomato
1 small onion, diced small pieces, not minced
lemon
1-2 cloves garlic
Pace Salsa, Hot or Extra Hot
salt

peel, pit, and coarsely mash avocados. Don't overmash.
Put diced onion and diced tomato in a bowl and mash a couple times, then add to avocado mash. Use a garlic press and add 1-2 cloves to your preference (I usually do one large clove). Drizzle in a couple teaspoons of fresh lemon juice, add a couple pinches of salt, and a couple tablespoons of Pace. Quickly blend without making it too smooth, adjust with more salt and lemon to taste.
Never -- I mean never -- add cilantro.

Never slice an avacado after peeling it unless you have an egg slicer.
