The core problem that they need to solve in the film is that the delorean that Marty unburies in 1955 and takes back to 1885 doesn't have any gas.
Well, there's actually ANOTHER delorean right there with them in 1885. Doc hid it in the cave for marty to unbury in 1955.
So, why not just syphon the gas from the buried delorean into the one Marty came back in? problem solved! No train, no love story, no biff-ancestor showdown. 5 minutes into the movie, they're both back in 1985.
That, my friends, is what we call a gaping plot hole.
