(Moderately) Healthy Recipes?

I am trying to update my diet and start eating better. One issue I have is that other than making a salad, I don't really know of any simple recipes for making a quick healthy dinner.

Does anyone have any moderately healthy recipes to share?

How many people are you cooking for? Just yourself? What are your likes/dislikes? I don't care for spicy food (as most already know around here, lol)...do you like seafood? Chicken? What can't you live without? What is your budget like?

I'd be happy to try to get you a few; I know there are lots of people on here that could chime in as well.

A meal we often eat is baked chicken (with just a little salt and pepper). When it's done we slice it into thin strips and mix it with steamed broccoli and top it over brown rice. Add a little soy sauce and it's delicious.

Not only is it healthy but it is cheap as well. You can adjust for any number of people.

Or you can have spicy chicken, baked chicken with hot sauce added at the end of cooking. I use Frank's. And I'll usually eat that also with brown rice and brocooli.

Another one we've come to enjoy is chicken baked with picante and two sides. Usually black beans and spanish rice.

The spanish rice I make by sauteeing 1 bell pepper and 1 small white onion. I'll add bacon bits (soft precooked salad ones) and 16 oz tomato juice. Then I'll prepare brown rice and add the rice to mixture and bake it for 20 minutes on 450.

We also have chicken wraps with icerberg lettuce as the tortilla and use bacon, avocado, tomato, and a light vinagrette.

Lou, don't you get tired of eating chicken? Ugh it is either chicken breasts or chicken thighs for us. Ugh. That is why I went cheeseburger and fries that night!

If I ate like that all the time I would be miserable.

There are usually 2-3 nights a week that we'll do the steak and potato business or go out and enjoy this really great chicken fried steak at a local place that uses cornflakes as their batter.

If my wife liked fish we would probably do a lot more healthier foods but disguising the chicken with hot sauce, soy sauce, picante sauce, and other stuff is what we do 4-5 nights per week.

Hey, last night I put a couple of slices of turkey bacon in a pan and browned them up. Then I added a bunch of mustard greens to the pan and covered it. After 10-15 minutes, the greens were wilted.

Add a bit more salt and you are set to go.

Easy peasy, lemon sweezy.

Flank steak, marinated and broiled, can be really good (if not cooked too long).

And not terrible for you, if eatem once in a while.

Ah, here is the source. Yes, flank steak can be wonderful when done right. My sister in law makes a heavenly version that I haven't perfected yet. And it's actually a fairly lean cut so good for you as red meat goes.

Just cooking for 2. I like spicy food. I love broccoli and cauliflower. I like sugar snap peas and cabbage. I like seafood and chicken.

I love mexican food but it is definitely not very healthy.

Some of the foods that I can't stand:
green beans, meat loaf, beef stroganoff
