My 40th birthday spread

Just a quick photo to brag a bit. My 40th BBQ was this past Sunday. Whole smoked suckling pig, burgers made from nothing but ground deckle (the top, fatty half of the brisket, homemade sausages and kielbasa from my buddy Gabe at Dicksons Farmstand Meats. Got to go on a 70 mile momo ride before the party... Man, what a day!

Im not putting ANYTHING in the ground in my neighborhood in Brooklyn! Its a toxic soup. Actually, the pitmaster at one of our sister restaurants Fatty 'Cue (www.fattycue.com) smoked it for me, my chef de Cuisine procured, brined, and rubbed it. I just help cut it an eat it. Tonight, the wife and I dig into the head. Yummy!

Hmm... I didn't even think of that, so obviously that's out.

I've had pig-cooked-in-the-ground at various Polynesian feasts and just the smell alone is heavenly. Had some Samoan neighbors who used to have a pig roast for birthdays (they had to get clearance from the fire department it's so smokey) and I stayed real friendly with them. :)
