I love them so much that I end up eating them straight from the can when ever I make them.

Yup. I don't know if they are good or bad for you, but I like them.

Most mexican-food establishments serve their meals with a side of Spanish rice and beans.

Spanish rice sucks. I always say "no rice, double beans."

Then my digestive system condemns me to frightful torture for the next few hours.

I have started getting only beans. I have a Mexican friend who says the rice is some sort of Chinese conspiracy.

point of order! Refreid doesnt actually mean fried twice. Refritos is the spanish word and the prefix re means well. SO really they should be called well fried beans, and let me tell you, I fry mine well. ON their own, the mashed beans are actually incredibly healthy for you. I fyr a side of beans here in about 3T lard. Just because I care.

Oh, and they are effin delicious.

Mexicn rice always dissapoints. Unless you do it right. I melt about a cup of chicken fat, and sweat out some garlic and onion in it, making a nice soffrito. I then ad tomato paste and mexican oregano to the soffrito, and cook out the paste until its a deep dark red. Then I add 2 Qts of jasmine rice and toast the rice briefly in the red delicious soffrito. Then, after toasting the rice, I cook it as normal in a rice cooker. Delicious. Too bad my freaking mexican cooks keep screwing it up!

For those of you who make your own beans, try substituting lard with chorizo. The chorizo adds enough fat to make the beans creamy, maybe cuts the total fat content, and adds a really nice flavor to the beans.

Can't say I love them, but they're good. For some reason, I can't eat them in a crunchy taco, but can in a soft taco. I can eat 'em straight with cheese melted on them...but cannot eat a bean burrito. That's just gross. (too much, perhaps? Needs other stuff with it).

...and jw7...spanish rice is sooooooooo disgusting. Double beans, no rice :thumbup:

AZ, thats a traditional dish called frijoles con puercos. We do that at the restaurant. Sweat out some bacon, add yer fresh chorizo and you have more than enough fat to fry the bean puree. Add in some pickled jalapeno strips, the vinegar cutting the fat bit, and top with raw onions, for the sharpness to balance it all out, and serve with tortilla chips, Best bean dip ever.

Beans are a good source of protein...nothing bad about it. Now if you fry them then that is a different story. I never use lard and if I refry ( only after cooking the beans- boil for about 2 1/2-3 hours) them, I use bacon fat. Lard has no flavor so I use the fat from the bacon to give it an accent of smokiness to the beans. Everything is in moderation but if you don't want to sacrifice taste, use bacon fat....makes all the difference in the world.

Schutd has the right idea.:thumbup:

If you go the healthy way, substitute the lard or fat with Canola oil. It doesn't taste that bad either. Never use canned beans to fry. If you make them yourself from scratch, you will never go back...promise.
