Gordian Knot is a piece of software that largely automates this process. I don't know what you're using to rip, but IMO the best software out there is still
DVD Decrypter. Unfortunately future development was shutdown due to Macrovision. A good feature about it lets you parse complete dvds so you can separate episodes of a show or extras. After you have separated the vobs, the rest is pretty simple. You can set the target file size and audio bitrate among other things. You can also crop out black bars if you need to. You can also setup batch encodes which again is useful if you're ripping tv discs.
