With the way all these exotic defenses are now set up to stop the pass, I must admit it would be interesting to see a team go to a two TE set with a full back and play smash mouth. I know the Pats prefer a two TE set but they seem to use it more as a vertical threat in the air

Agreed.

Not only that, I would try to find a 260lb running back, and see if anyone could tackle him.

What you describe is what the Bills did to the Cardinals last year to a lesser extent. They put their monster fullback back there, and sent him at Bucanon and Minter. I have never seen a linebacker dominated like Bucanon was. It wasn't that Bucanon was getting blocked, he was getting pancaked, and blow off his feet all over the field.
