Again, I am going to semi go against the grain and say Fear and Loathing...Scissorhands is another good pick though.

I took Pirates, but Finding Neverland and Donnie Brasco are up there for me.

I went with Dead Man. That one really stuck in my mind for a long time. This is hard one though, because he has played so many unique characters.

He was great in Fear and Loathing, but I can't picture anyone who could play Ed Wood as well as he did.

Another great movie was Don Juan DeMarco where he played the psych patient convinced he was Don Juan. Fantastic date movie. Certain to get you some action later.

Depp was good in From Hell. I almost included it, but I tried to keep the list to 10. Finding Neverland and Don Juan DeMarco could have made the list too.

Willy Wonka was a suprising miss too. The problem with character actors is that so many of their characters are memorable.

Finding Neverland, Don Juan De Marco, Once Upon a Time in Mexico... I chose Other because you missed a couple I'd want to consider, but Dead Man blew me away, and maybe POTC I of the commercial films.
Not sure I'd call him 'the best' of the generation (we've been through this I think) but most versatile, yes.

I picked other. My #1 fav of his is Finding Neverlad. Second fav is Don Juan DeMarco. Depp really is an amazing actor! I watched a documentary on him awhile ago and it was really interesting to watch. That man has done so many movies that are so totally different from each other! Don't think I've actually ever watched a Depp movie that I didn't like! Secret Window was another one I really liked!!!
