I just put 3 pounds of chicken, 3 cans of green enchilada sauce and a can of diced green chillies in the crock pot. Having people over tonight, thought I would make green chili enchiladas.

65 lbs of pork shoulder just went into my oven, covered in lard, for a 16 hour ride. Mmmmmmmmm

So what's the best way to prepare chicken so that it shreds easily?

Ok so I just used this method to make pulled pork sandwiches and it worked great.

Pork shoulder and a braising liquid of water, red wine vinegar, and liquid smoke. Use mostly water and very little smoke.

Drain the liquid, add BBQ sauce, and shred.

Serve on a soft roll with coleslaw and you're set.
