Home made beef jerkey

Anyone here make their own jerkey? I am taking up the hobby. Due to my recent surgery I am in need of snacks with high protein, low carbs and low fat.
So I ordered a pretty badass dehydrator a couple weeks ago.
The other day I ordered all the meat and ingredients I would need to make basic, peppered, jalapeño, and teriyaki jerky. Meat was delivered day before yesterday...jalapeños, cracked peppercorns and sea salt arrived...
Then Amazon suddenly shows one shipment delayed...
The box with my Prague powder, worcestershire sauce, balsamic vinegar, and liquid smoke....they say they will email me when it ships.
The ******? If I go on the site it still shows every single item available for delivery tomorrow....so why is my box not shipped?
This is the third time this year this type of thing has happened with amazon...they are becoming unreliable.

Anyway, back on topic...I'm going to make jerkey from steaks, and from extra lean ground beef as well...got a cool new jerkey shooter for the ground meat.

Any of you guys have a favorite recipe?

This is the big reason I dumped prime 2 years ago when they hike the rate to $140/year. I only wanted it for the shipping and kept running into shipping issues like this. I haven't missed it a bit since leaving. It's not hard to pool items into $35 order for free shipping. I can wait 4 days for most items.
