At the end of The Return of the King the eagles rescue Sam and Frodo from Mount Doom.

Why didn't they just get the eagles to fly Frodo into Mordor instead of walking the whole way?

They would have seen them coming and captured the ring?

Yep. The Eagles would have been overtaken by the Nazgul had they tried to fly Frodo there. When they picked up Gandalf (in the book) he said something to the effect of, 'we will have to outfly the Nazgul' Fortunately for Frodo and Sam, the Nazgul perished when the ring was destroyed.

Because then we wouldn't have had the pleasure of watching those midgets fall down and pick each other up about 73 times?

It's scarey to think how empty my life would be without that.
