Cover up the ball when you are running it. It's a button to do so. That gets rid of fumbles.
The turnovers seem crazy at first, but that's because the game isn't arcade wing and fling like it used to be. You have to step up into the pocket, read the defense and make the right pass or you get picked. You need to cover the ball running through traffic or you cough it up.
