Well I'm not sure of your set up, are you doing the traditional Team A food vs Team B food? If so, I have no idea what sort of food is 'Pittsburgh' food, but Arizona is easy. Chimichangas are a must (legend has it they were invented in Tucson), some taco dogs (a hot dog in a tortilla, deep fried, invented by downtown Phoenix's Ed the Hot Dogger). Generally use flour tortillas over corn, as that reflects the anglo influence on the food here. You should definitely rock a cheese crisp, no "Arizona" dinner would be complete with out it. Chille relleno, ceviche (or anything citrusy really, thats one of the 5 C's after all), albondigas soup and in general a heavy use of beef. Wash it down with some tasty horchata, or other aguas frescas.
I don't really have any recipes off hand, but those suggestions should get you going if you want something genuinely "Arizonan."
EDIT: Also its not really Arizonan, but Mexican, but get yourself some Mexican soda. Its a good way to feel like you're sticking it to the US Government and its idiotic corn subsidies, and its 300% more delicious than American soda. Instead of nasty, sticky corn syrup you'll get real sugar, its much sweeter and less filling, delicious!
