Putting together my SB menu (recipe post!)

I know this is a food topic, but I didn't think this post would get much traffic buried in the food forum. The game day menu is almost complete, but I could use a few suggestions to consider that might add more flavor to an expansive selection as is. Any dips or main dishes that any of you guys specialize in or know of would be great!

Buy some boneless pork ribs... "country style"

Season liberally with meat tenderizer for a few hrs in fridge and then wash off and dry with paper towels. Sprinkle them with some salt, pepper, and a little cayenne if you like. Then cover liberally with brown sugar. Some like granulated kind. Grill them up and get the outsides all dark and yummy !!! You can cut them small enough to put on toothpicks or eat with fingers.

Well I'm not sure of your set up, are you doing the traditional Team A food vs Team B food? If so, I have no idea what sort of food is 'Pittsburgh' food, but Arizona is easy. Chimichangas are a must (legend has it they were invented in Tucson), some taco dogs (a hot dog in a tortilla, deep fried, invented by downtown Phoenix's Ed the Hot Dogger). Generally use flour tortillas over corn, as that reflects the anglo influence on the food here. You should definitely rock a cheese crisp, no "Arizona" dinner would be complete with out it. Chille relleno, ceviche (or anything citrusy really, thats one of the 5 C's after all), albondigas soup and in general a heavy use of beef. Wash it down with some tasty horchata, or other aguas frescas.

I don't really have any recipes off hand, but those suggestions should get you going if you want something genuinely "Arizonan."

EDIT: Also its not really Arizonan, but Mexican, but get yourself some Mexican soda. Its a good way to feel like you're sticking it to the US Government and its idiotic corn subsidies, and its 300% more delicious than American soda. Instead of nasty, sticky corn syrup you'll get real sugar, its much sweeter and less filling, delicious!

1) Make thin Cardinal logo shaped sugar cookies

2) Meltdown the Steelers steel strength until it becomes light gray

3) Use this Steeler strength as Frosting and put it between the Cardinal logo cookies (oreo style).

4) Get as many Cardinal fans as possible to eat the cookies.


The the Cards consume their enemy and gain their strength and thereby prevail! Go Cards.

This one's called Superbowl Surprise.

Mix the following together and simmer for 17 weeks:

* One extremely weak NFC division (the weakest one you can find)
* Passing attack (remove the rushing game first, brown and drain off the defense)

Now add a good dose of luck along with a lot of false confidence and let stew for the next 3 weeks. Remove from heat and let it sit for two weeks, then add the following:

* Best quality opposing defense that you can find
* A solid, balanced opposing offense
* A heavy dose of reality

Broil at high heat for 3 or 4 hours then serve on a black and gold platter.

Serve with a side of 6 Lombardi's.

Linda, DCR, Donald, Or Abombs cardinal kool-aid recipe. THat stuff was "staggeringly" good.
Donald cooked up the juice you had...maybe we can get him to post it.

I am going simple this year. I am not going to spend time grilling or anything like that. I am going to Sams Club to buy in large quantities what ever I can put in a deep fryer and plenty of dipping sauce.

To get back to food:

Cheesy-Baked-Potatoes-That-They-Always-Win-When-We-Eat-These

As many baking potatoes as needed. 1 large baking potatoes for every 2 people, usually

Prepare baking dish by spraying with Pam or non-stick spray
Cut potatoes lenght-wise into wedges
Arrange in dish, pointy edge up (No, not standing on their ends.)
Salt, pepper, garlic powder, onion powder, whatever else you like
Dab on chunks of butter (ok to use fake stuff)
Sprinkle on parmesean cheese
Sprinkle on more parmesean cheese

Bake in a 400 degree oven for 60 minutes

Serve with dips: Bleu cheese, ranch, chipotle...whatever

These go great with steaks, ribs, wings...whatever

I will be making these and serving them BEFORE the game because I've already announced I'm going to be too dang preoccupied to even think about cooking or eating during the game.

I think that I might be viewing the game out and about. Was thinking about putting together a little brunch though in the morning. Some cinnamon buns, egg casserole, waffles, crepes, potatoes, pancakes and mimosas.

Brownies will definitely be made. It has become a gameday staple.

Get a 9x13 cassarole dish.
One can of refried beans.
Layer the beans on the bottom of the dish.
Get a 16 oz container of sour cream and a packet of dried taco seasoning. Mix the sour cream and taco seasoning together then layer on top of the beans.
Next layer hot Salsa on top of the sour cream mixture.
Chop up lots of green onions and layer on top of salsa.
Get a pack of shredded Mexican cheese and layer on top of green onions.

Buy a bag of Frito lay dipper corn chips and have at it.

I have a tradition with same friends for Super Bowl.

I always make flat enchiladas New Mexico style, corn tortillas, red chili sauce from scratch, queso Chihuahua blanco, onions and egg over easy on top. Garnish with lettuce, tomato.

Wife makes her killer brownies with walnuts and frosting. (no hashish):D

Got some friends coming over that day and so far on the menu we have:
Chicken Tacos
Homemade Salsa (my salsa rules)
Nacho Cheese sauce
Homemade Soft Pretzles
Homebrewed beer
Various odds and ends

I will be starting the morning off making some breakfast burros for all the early arrivals that are coming to help set up for the party.

By 11am I will have a brewski in hand and start working on grilling some wings, BBQ Chicken drumsticks with the homemade sticky and spicy sauce.

After that I told everyone coming they can bring a dish of some sort and it will be all about Cardinal domination and probably lots of brewskis. I am gonna be a mess until kickoff........

Here in Texas we go to http://www.zopsabilene.com/pics%20sun.htm this big party on Sunday from 11 am until about 2 hrs before the game. Then we go to a sports bar usually.

It is a charity event that started out as a small wild game feast but now is really huge and more mainstream. You can still get plenty of deer and fajitas and rm oysters and jalapenos grilled, etc. Its all free, invitation only with an auction for charity and you BYOB your own beer. Pretty sweet. check out the pics

On thurs-Sat nights they have concerts.

I'm missing it this year for the first time in like 13 years.. to go to TAMPA !!!! woo hoo
