Wow. That looks good and I am usually not much of a pork eater.
Al Pastor will change how you see pork forever. Especially when it's cooked right, and it's tender...put a little guacamole or salsa on there, and you'll be in heaven.

This looks so incredibly good I will have to try it.

I was born and raised on pit barbecue (pork) so it gave me flashbacks.

Pork prepared the right way is awesome.

This works well with chicken, skirt steak and even lamb. You'll have to watch your cook times and may want to change your marinade but the technique is the same.

Now I'm hungry.

I love pork but I don't like the pineapple in Al Pastor...

I like pineapple in moderation. For example, I really like pineapple in pizza or raw when I carve it up.

Is their something about the pineapple in Al Pastor that changes the taste?

Honestly, I don't know. I think part of it is the texture of the pineapple with the pork and the other is I prefer for the spice to overpower the sweet...

I like Al Pastor, but it's too sweet for DCR's tastes. It does seem the sweet overpowers the spicy often (which, of course, is fine by me).

I was raised on pit barbecue which had a spicy vinegar sauce (not sweet) so I know exactly what you mean. Thanks for the tip.
