Texas chili is better, but there are variants. Like Red River Chili - adored by purists who consider making it with tomato ingrediants or chopped meat to be heresy.
I confess to liking my chili doctored - I like chopped meat better than shredded or cubed beef and I like tomato and lots of texture in the form of fresh mushrooms and even celery (to break things up keep the chili from getting mushy). When all is said and done, the key is in using fresh spices. (A lot of the prepared stuff bought in stores is old and kind of stale & musty by comparison).
Whenever we anticipate a snow storm about to hit NJ, chili is terrific "snow food." We lay in a huge supply of fixins' and devote entire day to making a humongous pot of the wonderful stuff.
