Easy Chicken Tacos

Put 5 chicken breasts in a crock pot and add a can of Rotel Diced Green Chili's and tomatoes and a second small can of diced green chili's. Cook in the crock pot all day long on low. Heat corn tortilla shells in the microwave to make them soft and foldable, add cheese, sour cream, salsa, lettuce etc.

This is a quick easy meal.. I had 3 teachers over on Friday and they absolutely loved the tacos. Add in some Margaritas and chips and salsa and you have a good meal to entertain with. If you use the mild green chilis and tomatoes, then you have no spice at all and good flavoring if you're a spice wuss (cough linda cough).

lol... before I got to "(cough linda cough)" I thought, "Oh, good!" :)

Are the green chilis in the first can different from the second smaller can?

Do I have a crock pot anymore?




Statement:

I hate iceburg lettuce on tacos and most other things. I don't get the obsession (not you HB3, some people have with it.

thanks, for some reason I thought the tomatoes were a separate ingredient.
I wasn't sure if I was giving you a smart-assed answer or truly answering your question... :) (There is no difference in the green chilis themselves--wasn't sure if that was what you were asking or not)

I've done something similar but with pork. I used Herdez salsa verde.

Yeah. The nice thing about the crock pot is i literally used a spoon to shred the chicken. I love crock pot cooking. It's easy.

I made these on Sunday with green chiles and diced mexican style tomatoes.

Fantastic.

Bryan...simple, really good. :thumbup: Everyone ate it up...even Sara & she has turned into quite the picky eater.

This was my take as well. I'm still not sold on corn tortillas and chicken, they just don't seem to match as well as beef or fish would with corn tortillas. They were good enough to eat 5 of them though. :)

I did this again but with pork shoulder and chile verde sauce. Way better than the chicken IMO.

Yeah it works well with shredded beef as well. You can use it and make shredded beef burritos with pretty much the same recipe as well. With the burritos, you can add some pinto beans (or refried), salsa, sour cream, cheese etc.

It is fun. I miss my spice rack. I had all my spices nice & neatly alphabetized...the spices got old...I was out of counter space...I got rid of it. I want a cool one that hangs on the wall, but with that damn subwoofer it's probably not a good idea :(
