Oh, if you ever want to REALLY treat yourself, get yourself a nice Bison/Buffalo steak from Sprouts. It's better for you than chicken, and OMG delicious.

Old Chicago spaghetti. Yum. I worked a bunch of hours today so I was happy to have spaghetti waiting for me when I finally got home.

Arcadia Farms Cafe at the Phoenix Art Museum. Terrific food and champagne by the glass.

Art takes on a whole new meaning when you're viewing it after a nice glass of champagne. Sorry, sir. We did not see the trip wire.

Glazed ham (not for me), string beans, mashed potatoes, corn on the cob (which I have NEVER, EVER had on Easter dinner), cranberry sauce, rolls and wine.

One of my new year's resolutions has been to learn how to cook.

I mean really cook. Not like Top Ramen or Cold Cereal - which was my previous limit of cooking ability.

I've had some mild success just learning for the last month cooking 2 or 3 times a week, but tonight I finally cooked something good and not just edible.

Jambalaya, with 6 Italian sausages and 2 chicken breasts (cut and sliced, obviously)

W/ chopped onion, garlic, celery, chicken broth, powdered onion, cayenne powder, worcestershire sauce, salt, pepper, powdered garlic, a bit of olive oil, parsley, and tobasco. And rice. Plain old white rice.

The color didn't come out the way I wanted it (off white - I'm used to red), but the taste was spot on. Maybe I should use kielbasa next time. And shrimp. Gotta have some shrimp.

Tomorrow, I shall incinerate a potroast. :thumbup:

There's also a bag of flour and yeast sitting on the counter that I would love to dig into soon to make some french bread. The recipe seems simple, but I've never kneaded or punched bread before, and I just haven't had the 3 hours to make a loaf (all combined).

It's my daughter's 22nd birthday (sigh...) so she gets whatever she wants for dinner. Tonight's menu:

Country style pork ribs
Asparagus
Chicken & broccoli rice-a-roni (hey, whatever!)
...and one artichoke just for her, with garlic butter sauce

For dessert I made her:
Mocha chip cheesecake (all from scratch)
and
Homemade Reese's peanut butter cup ice cream

The cheesecake looks fabulous...I hope the ribs turn out ok. Heading home from work shortly to get started on them.

That's why my grandmother got up at 4am. ;)

How did the pot roast turn out? (I love pot roast!)

It was ok. Not great, but not bad.

I rubbed it in a pepper and rosemary mix, then seared the outside and let it cook in the oven. It came out ok, not dry, but very little taste. Maybe someone can help me out with that.

I roasted red potatoes in garlic and olive oil, and those were delicious.

Last night was leftovers. Tonight I was going to make beef and sausage stew, but I'm missing onion and the meat hasn't fully defrosted yet. So I may not cook.

BTW, does anyone know how to marinate with chicken and cider?

I'm on a really restrictive diet, so I didn't get to have anything but the asparagus. It's sooo hard making things like cheesecake & ice cream knowing you won't get to eat it :(

Everyone said it was delicious, though. I'm taking their word for it :)

I've never made country style pork ribs before (that I remember, at any rate). I lightly coated them with a flour/salt/pepper mix and seared them, then slow roasted them with a beef broth & asst seasonings mixture.

The cheesecake looked really good; I'm freezing myself a small piece for later, lol, and I also saved a small tupperware container of ice cream.

I know it's not my business, but if you can't eat eggs, some of the specialty stores sell egg replacer. It's a powder that you dissolve in water (made from tapioca or something, I think) and use just like you would eggs. It saves a lot of recipes...you don't really realize how many recipes and things you buy in the store have eggs as an ingredient until you start looking.
