I'm a bit suprised that nobody else is having Ham. We always have a huge spiral cut ham, potatoes, stuffing, fruit, veggies, etc. I actually thought it was pretty common...had all kinds of ham shoppers when I picked mine up the other day.

My wife's aunt made tamales. When we went to the grandparents, we had the traditional ham/roast, cheesy potatoes, etc.

I had Jack-in-the-Box. I had so little sleep on Christmas Eve, and was so exhausted by the time I got home from family & whatnot I just crashed. We're having our dinner tonight.

Turkey
Long grain rice w/currants & pine nuts (trying something new)
Cauliflower, broccoli & carrots
mashed taters
gravy
cranberry sauce

It came out really good. I mean, its essentially little individual beef wellingtons, so its gotta be good, right? The gratin was supreme. The beef, tender, just cooked to med rare, and the sauce, frenchy and delicious.

But hell, I better make a good holiday meal, Im a cook by trade.

Its that time again! I'm meeting my wifes family in Savanna in two days and have been charged with menus for Eve and Day. Im too busy at my place to get organized. Someone please help! I need ideas.

Im going to be in Georgia and I read about a farm that raises spanish ossabaw pigs that were "discovered" feral on an island in the gulf, and Id love to get my hands on one of those hams. Best pigs in the world come from Spain. But that might be typically over the top. Even for me. How the hell would I pull that off????

Did a deep fried turkey for my daughters birthday party. I have access to a commercial deep fryer, so it was easy. My first one. Man, they are delicious.

I brined that one too, by the way. I highly recommend it for deep frying as brining imparts excellent seasoning into the bird before frying it. Well seasoned throughout, not just where you sprinkle the salt before and after frying...

Was gonna have Chinese, but a friend invited me over so it looks like Italian ... cheese ravioli, salad, bread and stuff. Should be nice, though I like the family tradition of a turkey dinner with all the sides (sans the turkey).

Traditional fish for Christmas Eve... Christmas day we're doing a standing Rib Roast, with of course a pasta dish as a starter...

Xmas eve out with friends to a movie and maybe Chinese or Middle Eastern -- whatever's open.

I will make over the weekend, but you might consider for Xmas morning: sufganiyot -- a traditional Hanukkah food, basically a smallish, fresh-fried donut filled with jam (mmmm black raspberry) and rolled in powdered sugar. Made some at my daughter's the other night in Seattle as it snowed heavily outside -- very easy, actually, and what a treat! Basically a soft yeast dough (only slightly sweet) flavored with nutmeg and vanilla. You can make it using beer as the liquid, I am told, to improve the frying results. Deep-fry until puffed and golden, drain, inject with jam while still very warm, powdered-sugar them thoroughly, open wide. One of those instantly disappearing foods.

With standing rib roasts at such great prices, I'll do that, yorkshire pudding, maybe potatoes au gratin, and either a watercress, pear, and goat cheese salad or rapini steamed and tossed with expensive olive oil if I find really fresh (mine in garden is not ready yet). I might have considered a roast leg of lamb, but I taught my daughter how to do that. Then I like raisin-and-nut-stuffed apple dumplings for dessert.

Deep fried prime rib was the main course. Some meatball things that were good. I'm sure there was more, but I was drunk :D

Sometime this weekend we'll be having the ham I bought...but we were up until 5:30 wrapping presents...then up at 7:30. By the time we got home for the day from making "the rounds" there was no way in hell I was cooking anything.

I ended up doing grilled double cut pork chops with caramelized onions and roasted yukons with olive oil and sea salt. Simple, yummy.

Wasnt in the mood to go overboard, my restaurant got robbed on Christmas Eve after we closed. Awesome.

I want a do over. Bought one of those honey baked hams and it was defective.

Had the consistency of pudding and tasted like soggy cardboard. Ended up with Penne pasta a la Vodka for a last moment entree.

Indian tacos and wojapi for my household.

For wojapi you can take buffalo berries (any kind of berry generally works) and run them through a food processor put in a pot and simmer with honey or sugar (depending on how sweet you want it) until it begins to froth and bubble. You then corn starch to thicken to your liking. It works like a charm as a topping on fry bread.

We'll also make smaller pieces of fry bread and shake them in sugar and serve those as well.
