Here's some jalapenos with cream cheese, cheddar, sausage, wrapped in bacon that I smoked for a couple hours. My new favorite thing to cook.
If, you cook those until the bacon is crispy, it all tastes gross.

I've always wondered that, too...minus the Joan Jett part.

Second, I'm not sure I like being compared to a Wookie. It's dreamcastbacca that would rip your arms out for eating chewy bacon, anyway.

when done right the bacon is firm, not crispy or fatty/chewy

just a real nice smoky taste and firm texture that holds in the peppery goodness

I think I'm going to have to try Bacon salt on Mac & Cheese. For some reason that sounds fantastic.

I will buy some bacon salt one day but it's like $7.00 for a little can of it, not in the grocery budget in THIS economy

My ex-step-mother-in-law (don't ask) cooks bacon in the oven. It comes out perfectly flat and uniform and all the grease cooks out. The flavor is decent as it is nice and chewy. However it lacks that certain extra something that it gets cooking on the stove top.

that's how dcr & I do it--always. I think it's perfect. I make it crispy, though. Chewy = :barf:

It isn't cooking in its own juices as much. You lose that flavor, but it comes out so much nicer.
