OK something that has been bugging me about this movie.
If Sparrows father stole the coin how could he die? The other pirates obviously spent the money and still the curse didn't follow the recipient but the thief. How does this work? And how could Jacks father die? He stole the coin and even though he sent it to his son the curse should have applied to him directly.
Petty I know but the wife and I have been trying to figure this out to no avail. Let's see what you can come up with.
I think you mean Orlando Bloom's character's father, not Captain Jack Sparrow's father.

The father died because the curse had not yet set in. Captain Barbossa said that in one sequence. Remember, the curse didn't just set in. It started taking them slowly over time, starting with food and drink. He sent the gold away when the curse first started, so they killed him.
And the person who stole the gold is the one who is cursed. Bloom's character couldn't be cursed because he never stole it. His was the last remaining BLOOD of the guy who stole it, though so it was his that was needed to break the curse.
