So last night I had Italian bacon called guanciale. Really good stuff.

If I ever have a heart attack Bacon will be my downfall. I freaking love Bacon. I do have one pet peeve about the type of food I love bacon on....and that's cheeseburgers.

Bacon should be crispy on your bacon cheeseburger too. Fast food joints are notorious for chewy bacon. There just isn't very many places other then restaurants that get that right. I hate chewy bacon on cheeseburgers.

NICE! My ID that I created while I was banned, and then had subsequently deleted for all time after I was found out, was guanciale.

And that aint bacon, dude. Thats cured pig jowl. Welcome to the club, face eater.

I couldn't agree more. I had a baconater at Wendy's yesterday, and 2 of the 6 slices of bacon were chewy. It really did kill the entire burger.

I thought so. An Italian guy in Florence to me about it. He was so funny trying to say jowls.

had some bacon the other day from a Bosnian butcher in queens. Pressed bacon. It was three layers of bacon pressed together to make one superbacon. Absolutely amazing.

Crispy v. chewy bacon is close to melted v. liquid butter. There is a "fine line" between crispy/burnt and chewy/undercooked.

Chewy bacon on a burger tends to upset the delicate nature of the bun/burger staying together and not falling apart.

Im sorry to say, I like chewy bacon. Always. Never liked crispy bacon. Once its crispy, its pretty much burned as far as I'm concerned.

Chewy bacon on a hamburger???

Chewy bacon, always. But like Mulli says thats a fine line. I dont want the fat like raw or anything, but it shouldn't crumble when bitten into either. If it doesnt crumble it has chewy properties, and therefore cannot be considered crispy. Consult McGee!

layered top to bottom, not front to back. So one slice was actually three slices stacked top to bottom. WHen you cut it, they actually stayed together in one piece. It looked beautiful all fatty and marbled, and when I cooked it to a perfect chewy consistency and put it on my BLT, I only had to use one slice, like a piece of ham instead of a bunch of pieces of outdated, neolithic style singular layered bacon. The sandwich performed much more admirably.

Bacon should never crumble in a burger. Its fine for bacon to crumble in a cobb salad, you sissy!

its not crumbling if it stays together with the rest of your burger.
