Sunday I made Enchiladas for breakfast.

I made regular ground beef and cheese red enchildas but also stuffed them with Tater tots and added some diced green chiles and some diced chipotle.

Then when they were done I served over easy eggs on top of them. And paired it with screwdrivers for me and my brother in-law, sparkling cider memossa's for our pregnant wives.

It was the best breakfast I've ever had.

Not being a smart ass at all--what is "diced chipotle"? I have only heard of Chipotle referred to as a sauce.

Chipotle peppers are smoked jalapenos. Any sauce you heard with the name Chipotle in it means that it has those peppers in it.

Thank you. I was guessing from context it was probably some sort of pepper, but had no clue it was a smoked jalapeno.

Chipotle peppers are smoked jalapenos. Any sauce you heard with the name Chipotle in it means that it has those peppers in it.

Keep in mid however that most of the time, you"ll find chipotle peppers in adobo. thats the tomato based sauce you find the peppers in. Sometimes the term is used interchangeably, though it's incorrect to do so.

We have that for breakfast every christmas. Throw in some link sausages too. We should probably do it more often though, it's flippin great.

I would rate that as the 3rd best. Right behind Chicken fried steak, over easy eggs, and hashbrowns. And of course they both are overshadowed by breakfast enchiladas.

That mom and pop place in Flagstaff that we met up might have been the best B&G I have ever had.

When I was touring with the band, I had to eat B and G in every town we stopped in. Had amazing B and G in Flagstaff, in Portland, in Ojai.

We used to eat them so much we wrote a song dedicated to them. Man, I love CFS and eggs, I love breakfast enchiladas with eggs, but B and G, done right, with tons of pepper, and crumbled up sausage bits, biscuits as light as air, made with lard, Man. Nothing beats it. Nothing.
