btw, in keeping with tradition, I inadvertently stole a knife from your kitchen (it was in the brownie dish). We can make a trade for the pie plate & tupperware sometime. Until then, it's MINE!! :D

What does goat taste like? Seems like the ultimate land based bottom feeder. Can you charge more for goat?

It actually has a wonderful, slightly sweet flavor, not too gamy, but rich. I buy baby goats from a compendium of small farms upstate. They come in whole, I have to butcher them (weird breaking own a whole skinned animal that looks more like a greyhound in that state than a goat), rub them in a paste of chilies, garlic, onion, tequila and sour orange juice. They marinade for a day, then I wrap the pieces in banana leaves and slow roast them in a 225 degree oven for about 7 hours (for the shoulder, less for the ribs and saddle and neck/head).

Then I eat the liveing hell out of it with tortillas, crema, salsa borracha and cilantro.

These goats are not lie yer "ate-a-license-plate-followed-by-an-old-shoe" type of animals. Kill em young, before the get tough.
