That 3-cone time is really impressive for a 6' 5" LB. Definitely is athletic, had a lot of top 4 performances for LBs at the combine.
If I'm the Cards, I'd throw a boat load of money at La'el Collins. You'd get two first round caliber OL without having to use two #1 picks. You move Cooper to center and have an OL of:
Veldheer, Iupati, Cooper, Collins, and Humphries. That's a lot of talent.

Xavier Williams.. I thought he could get drafted. Can he play the nose?
Yes he can, and I hope that the Cardinals signed him.
I cannot find anything to confirm this, but if the Cardinals did sign Williams that would be great in concerns to the nose tackle position.
East-West Shrine Game:
Top Performer, West Defense: Xavier Williams, DT, Northern Iowa
There were at least five defensive linemen who made a real case for being the Shrine Game’s best player this week, but my vote goes to Northern Iowa defensive tackle Xavier Williams.
Williams stood out all week, both in practices and in Saturday’s game, for his quickness off the snap. He was consistently the first player into the backfield as he displayed a great first step and the acceleration to quickly close on a quarterback or running back. Combining that explosiveness with the power to drive a blocker back as well as solid use of hands, Williams consistently won his battles against opposing offensive linemen.
The only blemish on Williams this week, which also came back to bite him once for a penalty in the game, is that he has a tendency to go offsides because he regularly tries to jump the snap (h/t John Owning of Draft Breakdown for pointing this out). Nonetheless, Williams validated his skill set this week after a highly productive collegiate career. He has solidified himself as a potential third- or fourth-round draft pick.

Zach Wagemann is a great pick-up. He'd have been drafted - likely 5th round, without his injury.
Team Co-captain. Awarded the #37 jersey for his senior year, which is given to the best in-state defensive player that exemplifies Grizzly traditions of hard work, excellence, etc.
Also a finalist for the Buck Buchanan Award, which is given to the top defensive player in FCS.
I heard on NFL radio that there may have been a league directive not to draft La'el Collins, that's why no one picked him up. Conspiracy theory... guess they didn't want a murder suspect in the league.
Doubt that it would be as formal as a directive because that would be collusion/anti trust etc. But I agree there must have been enough concern and intel to let these guys know the risk factor was too great.

Pretty sad that I'm more excited about our UDFA than our actual draft.
